Tater-Topped Casserole

Tater-Topped Casserole (Taste of Home)
1 lb. Ground Beef
1/2 c. Chopped Onion
1/3c. Chopped Celery
1 can Cream of Celery Soup
16oz Frozen Tater Tots
1 c. Shredded Cheddar Cheese


In large skillet cook the beef, onion and celery until meat is no longer pink and veggies are tender; drain. Stir in salt and pepper for seasoning. Spoon mixture in a greased 3qt baking dish. Mix with soup, top with frozen tots. Bake at 400 for 40 minutes or until bubbly. Remove and sprinkle with cheese, bake 5 minutes.


*Nathan loved this. I didn't care for it, however I hate tater tots and celery. I made it for him because he thought it looked good in my magazine. PS the doggies liked it too, they had one tot and some beef......they didn't complain! :)

Easy Weeknight Recipe


Chicken Noodle Encore (Nicole Johnson)

2 c. Penne Noodles
1 lb. Cooked Cubed Chicken
1 c. Frozen Veggies (Thawed)
8 oz. Shredded Cheddar Cheese
2 cans Cream of Chicken Soup
1 Soup Can of Milk
French Fried Onions


Cook noodles and set aside. Cook chicken and season w/salt and pepper. Place all but onions in 9x13 dish and mix well. Bake covered @ 350 for 25 mintues, remove and spread onions over the top. Cook uncovered remaining 5 minutes. Cool, serve, and enjoy!

1) Last Song by Nicholas Sparks. It's a great book, one of my favorites. The movie is also good, but not as complete as the book. They really don't develop some of the best characters!


2) Heart of the Matter by Emily Giffin. She is my favorite author!. If you haven't read any start with Something Borrowed. Its her first book and by far my favorite! Heart of the Matter is great though!
